This recipe is easily halved, but presented here to yield 700ml, which is the same size as your Cultivaro Amaro bottle for a chic gift if you accidentally drank the bottle yourself

Ingredients

Cultivaro Amaro2 tablespoon
Dijon mustard4 tablespoons
1 lemon's juice2-3 tablespoon
sherry vinegar (or any fine wine vinegar)4 tablespoons
honey2 tablespoon
olive oil2 cups +
kosher saltpinches

Garnish

lettuce; optional: bread, fish, tomatoes, cucumber, cheese, nuts, seeds, egg, fresh or dried herbs, bacon,etc

Method

  1. Combine the base: whisk together 4 tablespoons Dijon mustard, 2 tablespoon lemon's juice, 4 tablespoons sherry vinegar, and 2 tablespoon Cultivaro Amaro in a bowl until smooth.
  2. Add honey and salt: whisk in 2 tablespoons honey and a generous pinch of salt to taste, adjusting salt as needed.
  3. The oil: stirring with a whisk, slowly incorporate 2 cups plus 2 tablespoons of olive oil until the dressing emulsifies and thickens.
  4. Balance as needed: add water a splash at a time if the dressing is too thick or sharp, tasting as you go depending on how you like it to drape.
